Well not quite a mojito, my version...which has vodka instead of rum and lemon instead of limes. Now that I think of it, that's not really a mojito at all... rats! It's a darn good cocktail though, so you should try it! Mint is one of the easiest herbs to grow, it acts much like a weed, a tasty weed that has tons of uses. I'm thinking I could really go for one of these when I get home from work...care to join me?! : )Recipe:
2 1/2 oz vodka
Juice of 1 lemon
1 oz mint simple syrup (recipe follows)
Pour ingredients into a shaker filled with ice, shake vigorously until chilled. Strain into a glass filled with crushed ice and garnish with mint.
Mint Simple Syrup (making simple syrup flavored with fresh mint for this drink avoids having bits and pieces of mint floating in the drink).
2 parts water
1 Part Sugar
Boil and stir occasionally, remove from heat and steep whole mint (like a tea) for 10 minutes. Let cool. Strain syrup.
